Chelsey Kosmicki and Lacey Koch
Chelsey and Lacey have over 20 years of combined experience working at Cafe on the Square and other restaurant establishments. When the Cafe closed in November of 2017, they had a desire to open it back up and take it in the direction they wanted. With motivation from their regulars, who missed seeing them around, they really got the inkling to move forward. After reaching out to family members and the community for help, they were able to purchase the building and open up the Cafe. However, they couldn’t have done it without getting their chef, Aaron Rucker, who has over 20 years of culinary experience. Together, the three were dedicated to opening the Cafe to provide the community of Seward with a great breakfast, lunch, and dinner establishment. About six months into the Cafe, they were contacted by the owners of The Brew House in Crete, NE wanting to know if they would be interested in buying it. With much thought and consideration and the help, they took over The Brew House in November 2018, again with Aaron right by their side.
Aaron Rucker brings with him over 20 years of culinary experience, including a decade of kitchen management. He has lived in Seward County his whole life. He grew up in Utica and washed dishes as a teen at American Legion Club. He realized his passion after five years at Chances ‘R’ in York, and worked 15 years at Green Gateau in Lincoln. Aaron and his wife, Amber, moved to Seward in 2006 and have enjoyed being a part of the community with their children Emerson, Charlotte and Tyson. In his downtime, Aaron will watch any sport that’s on TV, with a special affection for the Chicago Cubs and Dallas Cowboys. Aaron is thrilled to bring his love of cooking to the Seward community and giving the Cafe his own touch.
